everyone's a coconut

It's that time of year again. Time to make coconut pyramids. I thought I'd update my recipe instructions and show you my first batch of 2012.

keep on pressing and mixing until combined

press down firmly before covering and leaving for an hour

it's all a squash and a squeeze at this stage

perhaps these ones could have done with one minute less in the oven!

the smell of warm coconut is wonderful!
and they taste pretty good too!
